1 medium sweet potato, with skin, cut into chunky chips
2 - 3 teaspoons extra virgin olive oil
1 tablespoon Italian herbs

Preheat oven to 190˚C/375˚F

Place chopped sweet potato onto a baking tray, making sure pieces don’t touch. Drizzle oil and sprinkle herbs evenly to cover.

Bake for 25 – 30 mins and serve straight away or store in the fridge.
